Here’s the recipe:
Ingredients
• 1 (18 oz.) box brownie mix
• 1/3 C vegetable oil
• 1/3 C water
• 1 egg
• 1 C peanut butter, melted
• Oil spray, as needed
• Ice cream, whipped cream, & sprinkles to garnish (optional)
Procedure:
1. Set 2 burners to medium heat. Once the temperature reaches ~350 degrees, turn off one of the burners and increase the remaining burner to high heat. This will allow you to set up for indirect cooking (note: re-ignite one additional burner every so often if the temperature drops below 325 degrees. I did this throughout the cooking process to make sure I was staying close to my desired temperature).
2. Mix the brownie mix, oil, egg, and water in a bowl until well combined. Add half of the mixture to a well-oiled cast iron skillet and spread evenly with a spatula. Next, drizzle the melted peanut butter over the brownie mix, spreading it evenly as well (this will serve as the middle layer of the brownies). Finally, top with the remaining brownie mix.
3. Add the skillet to the grill and place over the unlit burners for indirect cooking. You may need to rotate the skillet every 15 minutes or so to prevent one side from cooking faster than the other. Once a toothpick inserted into the middle of the brownie mix comes out clean, remove the skillet from the grill.
4. Serve the brownies in a bowl with toppings of choice if desired. Enjoy!
