A good rack of lamb and cranberry sauce pair together so well this time of year. These were cooked in the Big Easy Outdoor Air Fryer which makes this cook even easier for a holiday-worthy meal. Here’s how @blackdog_bbq made it:
Ingredients
• 1-2 (2-3 lbs.) racks of lamb
• 1:1 salt & pepper mix
• 1 (12 oz.) bag cranberries
• ¼ cup bourbon
• ¼ cup shallots, minced
• 1 orange, zested & juiced
• ¾ cup water
• 1 cup brown sugar
• Salt & pepper to taste
Steps:
1️⃣ Make the Sauce: Sauté shallots, reduce bourbon to a syrup, then add the orange juice, cranberries, water, and brown sugar. Simmer until the cranberries pop open. Chill until ready to serve.
2️⃣ Prep the Lamb: Score the fat cap in a crosshatch pattern and season with salt and pepper. Hook the racks using Charbroil’s accessory kit and hang them in the Big Easy.
3️⃣ Cook: Set to medium heat and cook until the internal temp hits ~130°F. For a crispier exterior, add the wire mesh top that comes with the big easy for the last few minutes.
4️⃣ Finish: Rest the lamb for 10-15 minutes, carve between the bones, and serve with that killer cranberry bourbon sauce.
