Halloween calls for Pumpkin Soup & Grilled Cheese by @blackdog_bbq ????????
.
The combination of savory soup plus crispy, salty grilled cheese makes for a delicious combination
.
Here’s how it’s made:

Ingredients:
• 3 (15 oz.) cans pumpkin puree
• 1 onion, coarsely chopped
• 3-4 large garlic cloves
• 1 T Italian herb seasoning
• 2 tsp salt + more to taste
• 5-6 whole peppercorns
• 6 C chicken broth
• 2 tsp Worcestershire sauce
• ½ - 1 C heavy cream
• Chopped parsley, to garnish
• Bread as needed
• White American cheese, as needed
• ¼ C mayonnaise

Procedure:
1. Preheat grill to 400 degrees. Meanwhile, add pumpkin puree & the next 7 ingredients to a large Dutch oven and mix until combined. Add the dutch oven to the grill and cook uncovered for ~20 minutes.
2. FOR THE HALLOWEEN-THEMED GRILLED CHEESE: place two slices of cheese on a slice of bread and add the top piece of bread. Use Halloween-themed cookie cutters, cut your grilled cheese (skip this step if desired). Set the cutouts on a baking sheet and spread mayonnaise liberally over the top and bottom of each piece of bread.
3. Pour the soup into a blender and mix until smooth – note that this may need to be done in batches (I used a large bowl to pour the blended soup into while I worked on the second batch). Add the blended soup back to the Dutch oven and return to the grill with the grilled cheeses.
4. Cook the grilled cheeses until golden brown on each side, then remove from the grill.
5. Add the heavy cream into the soup in batches, stirring to combine. Continue adding heavy cream until the desired consistency is reached. Once this occurs, remove the dutch oven from the grill.
7. To Finish: Ladle the soup into bowls and top with parsley to garnish. Serve with the grilled cheese cutouts and enjoy!
