Grilled Chicken Kabobs are an incredibly easy & versatile protein that can be paired with so many foods. @blackdog_bbq loves cooking these during the week for a quick, easy meal.

Ingredients:
• 2 lbs. boneless chicken breasts, cubed
• 2 T olive oil
• ¼ C creole seasoning
• Salt to taste
• 1 C honey mustard
• ¼ C hot sauce
• 1 T garlic powder
• 1 T dried parlsey
• ½ T dried basil
• Honey (optional) to taste if you prefer the sauce sweeter
• Chives to garnish
For the Irish Gold Sauce:
1. Mix the honey mustard plus the next 4 ingredients in a bowl until well combined. Refrigerate until ready to use.
For the Kabobs:
1. Preheat grill to medium-high heat. Meanwhile, toss the cubed chicken breasts in olive oil and creole seasoning until well coated. Add salt if desired. Skewer the cubed chicken & set aside.
2. Once the grill has preheated, add the kabobs and cook until for about 5 minutes each side. Once the chicken registers ~150 degrees, brush the kabobs with the Irish gold sauce. Continue cooking until the chicken reaches 165 degrees, then remove from the grill.
3. Serve over a bed of rice or with sides of choice. Pour the remaining sauce into a bowl to dip the chicken in if desired, garnish with chives, and enjoy!
