Description
French toast, Canadian bacon and a pineapple compote. Run, don't walk to your griddle.
For the French Toast:
4 thick-cut slices brioche
4 large slices Canadian bacon
8 ounces cream cheese, room temperature
2 cups crushed pineapple, drained
1 cup whole milk
3 eggs
2 teaspoons vanilla
2 tablespoons brown sugar
5 tablespoons butter
2 tablespoons powdered sugar
For the Pineapple Compote
3 cups pineapple chunks
1 cup sugar
¾ cup pineapple juice
1 tablespoon cornstarch
¼ cup water
